While there are many things that I am horrible at baking (I’m talking about you, cupcakes), there is one thing that I am GREAT at baking: Chocolate Chip Cookies. Yes, so original, I know. But I’m telling you guys, these are some of the best cookies in the world and I say that will all intention of tooting my own horn. Everywhere I go, people request that I bring these cookies. My favorite part is when people ask me for the recipe and their mouths drop. The original Nestle Tollhouse Chocolate Chip Cookie Recipe?! YES! This always reminds me on FRIENDS with Pheobe and Monica were trying to figure out Pheobe’s grandmas amazing chocolate chip cookie recipe. 😂

But, for reals, this recipe is the bomb. However, there are a few tips and tricks up my sleeve that make them go from good to great. Are you ready for this people?! Let’s get baking.

Original Recipe (see below for my updated recipe):

2 1/4 cups all-purpose flour 2 1/2 cups all-purpose flour
1 teaspoon baking soda (make sure it is super fresh)
1 teaspoon salt 1.5 teaspoons salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon tablespoon vanilla extract (vanilla paste is even better)
2 large eggs (room temperature)
2 cups Semi-Sweet Chocolate Morsels (1 cup Semi-Sweet Chocolate Chips, 1 cup Milk Chocolate Chips)
1 cup chopped nuts WHY do people put nuts in cookies?!

Here’s the updated recipe with all of my changes:

1 teaspoon baking soda (make sure it is super fresh)
1.5 teaspoons salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tablespoon homemade vanilla extract (vanilla paste is even better in this recipe)
2 large eggs (room temperature)
1 cup Semi-Sweet Chocolate Chips
1 cup Milk Chocolate Chips

Directions:

A note before we get started. I find that the recipe works best in a KitchenAid. However, you MUST use the spatula paddle attachment (like this). This makes sure that everything gets incorporated and consistent. Plus, you save a ton of time by not having the stop the KitchenAid a million times to scrape down the sides of the bowl.

1. Preheat oven to 375 degrees Fahrenheit.

2. In a KitchenAid bowl with the spatula paddle attachment attached, add softened butter and white and brown sugars. Make sure you really pack in the brown sugar. When you pour it into the bowl, the brown sugar should still be in the shape of the cup. Turn on medium speed and continue beating until it is super light and fluffy (around 4-5 minutes).

2. Once the butter is a pale yellow color, slowly add the eggs one at a time. Crack first in a small bowl. I can’t tell you how many times I have cracked an egg straight into the bowl only for it to be bloody and having to throw out the whole mixture.

3. Once the eggs are mixed in, add your vanilla extract. I like A LOT of vanilla. I put 1 tablespoon of extract in the recipe, but in all honesty, I probably use closer to 2 tablespoons.

4. After you beat in the vanilla, turn the KitchenAid off. In a medium sized bowl, add flour, baking soda, and salt. Whisk together. Then, with the KitchenAid on slow speed, slowly and carefully add in one cup of flour at a time. Stop the mixer as soon as the flour is all incorporated.

5. Add both semi-sweet and milk chocolate chips to the raw dough. It is VERY important to use two types of chocolate. Honestly, if you don’t use both kinds, then it isn’t worth making (in my honest opinion). Turn the mixer on slow until the chocolate chips are equally mixed.

6. Put parchment paper on 4 baking sheets. Using a trigger ice-cream scoop (I personally like the 5cm size), scoop 8 cookies onto each sheet.

7. Place cookies in preheated oven for 7-9 minutes. Probably the most important part of the cookies is to underbake them so watch carefully. This is what ensures that they are gooey, chewy, and melts in your mouth. Take them out of the oven as soon as color starts to form on the edges. Place them on cooling racks to cool completely.
